1. Cut the tuna in small pieces , 1 inch square. .
2. Place the tuna in a bowl, add the scallions, kewpie mayo. sriracha (hot sauce), soya sauce and combine. .2. if cooking rice, use 1 cup +2 cups water, bring to boil, lower the heat cook until all water has absorbed, 10 to 12 minutes.
3. Place hot rice in serving bowls, add rice vinegar and mix.
4. Top the rice with spicy tuna mix and garnish with sliced avocado cucumber strips, lastly sprinkle sesame seeds.
