Quinoa Cakes

Ingredients

  • 1½ Cups Cooked Quinoa
  • 2 Ground Flax
  • 6 Tbsp Water
  • 1 Cup Kale Chopped
  • ½ Cup Rolled Oats Ground
  • ½ Cup Sweet Potato Shredded
  • ¼  Cup Tomatoes Chopped
  • ¼  Cup Sunflower Seeds
  • ¼  Cup Fresh Basil Leaves Finely Chopped
  • 1 Small Onion Minced
  • 1 Garlic Clove Minced
  • 1½ Tsp Dried Oregano
  • 1½ Tsp Red Wine Vinegar
  • ½ Tsp Salt
  • 3 Gluten Free All-Purpose Flour
  • 1 Tsp Red Pepper Flakes


Method

1. Preheat the oven to 350° F.

2. Line a large baking sheet with foil paper.

3. In a bowl, mix together all ingredients until smooth.

4. Now, shape this mixture into desired size patties.

5. Transfer to the baking sheet.

6. Bake for 12 to 15 minutes and then flip the cake.

7. Return to the oven and bake for 10 minutes until crispy and golden browned.

8. Serve warm.
