Grilled Tofu on Rice Bed Salad

Have this healthy salad recipe to satisfy your hunger. Easy to make and healthy to munch on.

Ingredients:

  • 6 Parsnips
  • 1 Liter Vegetable Stock
  • 1 Cup Puy Lentils
  • 1 Bay Leaf
  • ¼ Cup Walnuts
  • 2 Tbsp Olive Oil
  • 3 Tbsp Walnut Oil
  • 1 Tbsp Red Wine Vinegar
  • 2 Tsp Honey
  • ½ Tsp Dijon Mustard

Method

1. Take a saucepan, put one cup water with a pinch of salt into it. Put rice & boil over high flame. Once boiled, simmer it & let it cook until the rice is done & water absorbed. This will take around 10 mins approximately. When the rice is cooked, take it out from the saucepan, spread it on a large tray & let it cool off completely.

2. Now turn on your barbecue grille on medium heat. Take the tofu slices & coat it with 1 tbsp olive oil, salt & pepper to taste. Grill it evenly on both the sides until its nicely grilled. Remove from the grille. Now take a skillet, put it on medium heat. Pour your remaining 1 tbsp olive oil in it. Sauté the bell peppers & season as per your taste. In a bowl put together mix cooked rice & bell peppers, vinaigrette, lemon juice, parsley & toss this together lightly.

3. Lastly, plate in a wide salad bowl by first putting the rice mixture in it & making it into a flat base, to this put your cherry tomatoes, avocado slices &sautéed bell peppers. Now place the grilled tofu slices on this. Add your flax seeds as a topping for that added health & crunch.
