Egg Italiano

  • 4 nos Free Range Eggs
  • 2 Cup Diced Zucchini
  • 3 Oz Diced Tomatoes
  • 1 Tsp Chopped Garlic 
  • 1 Tbsp Diced Shallots
  • 4 nos Bacon Rashes
  • 2 Tbsp Olive Oil
  • 2 Tsp Salt 
  • 4 Tsp Ground Black Pepper
  • 2 Tbsp Vinegar 


1. Bring 1 liter water in a medium sauce pan to a boil, lower the heat (no more boil), add the vinegar. Break the eggs one by one in a small bowl and slip them one by one in the water, poach 3 minutes for a soft set, 5 minutes for medium.

2. In the meantime heat the oil in a skillet on medium heat, add shallot, garlic and zucchini and fry 1 minute, add tomato, fry one more minute.

3. Remove eggs from water and drain, divide vegetable mix over 2 plates and top with a poached egg.

4. Sprinkle with salt and pepper and serve!
