Crunchy Chickpea Salad


  • 2 Cups Freshly Cooked Chickpeas
  • 1 Ripe Avocado Pitted
  • 2 Tsp Dijon Mustard
  • 1 Tbsp Lemon Juice 
  • 2 Tsp Salt 
  • 4 Cup Chopped Red Onion
  • 4 Cup Chopped Red Pepper
  • 2 Cup Chopped Cucumber
  • 2 Tbsp Fresh Minced Dill


1. In a large bowl, mix together chickpeas and avocado and roughly mash with a potato masher.

2. Add in the Dijon mustard, lemon juice, salt, red onion, red pepper, cucumber and mix to combine.
