Baked Vegetable Kebabs

Ingredients

  • 1 Tbsp Honey
  • 1 Tsp Grainy Mustard
  • 2 Tbsp Oil
  • 1 Pc Courgette (Thickly Sliced)
  • 1 Small Pc Aubergine (Cut Into Chunks)
  • 1 Small Pc Red Onion (Cut Into Wedges)
  • 8 Pcs Cherry Tomatoes
  • 1 Pc Orange Pepper (Cut Into Chunks)


Method

1. Soak 4 wooden skewers in water for 30 mins. Heat oven to 200C/180C fan/gas 2. Blend the honey, mustard & oil with seasoning.3. To assemble, thread veg onto skewers & brush with glaze. Cook for 25-30 mins in the oven or on the barbecue, brushing with any remaining glaze before serving.
